Rogue Bolivia Tranquilidad 75% cacao

Clean and flavorful. The bar is thin, making it easy to experience the taste. Light butter and molasses come to mind. Very clean finish. 8.9

"Remotely situated on 1,500 acres deep in the Bolivian Amazon Basin lies Hacienda Tranquilidad, a farm producing a cacao that is both wildcrafted and single-estate. Its owner,Volker Lehmann, was the first in the modern era to achieve the remarkable feat of commercializing the endemic Beniano cacao variety. The enormous wild or "Silvestre" cacao trees grow in a natural forest measuring 850 acres where they are left to themselves each year until harvested. The tiny pods are then cracked and the cacao is fermented for 4 days and sun dried for another 4. This very special cacao has a lightly fruity, floral character, with wonderful candy and grain notes. We have carefully sorted out the best quality nib to present to you a refined version of an unnamed raw material."
