Valrhona Domincan Republic Loma Sotavento 2013 64% cacao
This is a gentle dark chocolate. The side flavors are subtle, maple and almond notes. The main chocolate line is smooth and clean. The bitterness of this bar is very low. 7.9
From the label: "In the Maria Trinidad Sanchez region in the northeastern section of the Dominican Republic, lies the Valrhona cacao plantation, which extends along lush hillsides not far from the ocean. In this land shaded by large fruit trees, in soil rich with sun and rain, is where Loma Sotavento Estate Grown chocolate was created. Long on the palate, very balanced and chocolatey, the round, ripe fruit notes gently give way to a delicate touch of toasted aromas."
