Valrhona Les Grands Crus Guanaja "bittersweet & elegant" 70% cacao

My first impression from this chocolate is spiciness -- a piquant burst on first taste. This is followed by some bitterness that builds a strong chocolate presence. There is a lengthy taper of flavor as a result as the chocolate melts. 7.0

From the label:
"Named after the now-famous Caribbean island where Christopher Columbus landed in1502, Guanaja offers a completely original blend of cocoas, with subtle Criollos, and powerfully fragrant Trinitarios and Forasteros. The Grand Cru has a high cocoa content and is surprisingly bitter, but the range is full of warm notes. The recipe, of course, remains a closely guarded secret."
