Fairly bitter for the cacao percentage. Flavors I taste are toast, rose, cherry. Aftertaste is more in line with the cacao percentage, not very bitter, with a nice trail-off. 7.9
From the label: "Deep in the Amazon rainforest in the Orinoco River basin, there are remote areas believed to hold some of the original strains of cacao. This cacao is harvested from the jungle by two indigenous Piaroa communities. During the rainy season this area is inaccessible, so during the dry season cacao beans travel by water on a two-day canoe trip to the nearest road or by land on a treacherous day long 4x4 expedition. The chocolate has a robust chocolate base with delicate flavors of blackberry, floral, malt, and cashew."
