François Pralus Equateur 75% cacao

Citrus flavor, with a rich, warm cocoa foundation. Some chalkiness in the aftertaste, but it does not interfere with the enjoyment. Some faint bitterness.  8.3

From the label:
"Powerful nose, fruity, dried figs and dried citrus fruit, full on the palate, bitter and slightly acidic."
"This chocolate is made from the 'Nacional Ecuador' cocoa bean, also called Arriba. Sometime compared to Criollo, the pods and the beans are larger and more tannic. It's aromatic profile makes it a mist try for aficionados around the world. It is sourced from an organic coop situated in the Bueno Fe Los Rios Province."
